That’s where you’ll find Gracias Madre, a beautifully designed plant-based, farm-fresh and locally sourced eatery spotlighting delicious South-of-the-Border eats. With Chef Chandra Gilbert at the helm, you can easily tuck into Mexican comfort foods that also pass the dairy- and meat-free tests. How about a cheesy quesadilla filled with butternut squash, caramelized onion and pumpkin seed salsa — and, oh, have we mentioned that’s with cashew nacho cheese? In the mood for carnitas? There are tacos with a barbecue jackfruit version. Chorizo? Here, it’s made with tempeh.

There’s also a fantastic cocktail menu, by beverage director Jason Eisner, which is sure to please attending carnivores, too. The house margarita is a must-try — it’s made with tequila reposado, agave, lime, orange bitters and a sweet orange salt rim. Other creative concoctions include the Sorry Ms. Jamson (apricot jam, habanero bitters, lemon, mezcal, float of tempranillo), Boozy Popsicle (pineapple jalapeño popsicle, tequila blanco) and a trio of drinks incorporating 100% organic cannabinoid oil — medical marijuana card not required.
